We had some left over aspargus that we needed to cook from the weekend...+ chicken, obviously ;) So I googled chicken & asparagus and found this....perfect!! It was soooo yummy! I loved the lemony flavor it gave to the aspargus!
Prep: In a glass dish, stir together soy sauce, lemon juice and zest, and cornstarch. Add chicken pieces and coat well with marinade. Cover and refrigerate for 15-30 minutes. Heat oil in a large nonstick skillet. Add garlic and fry until softened. Reserving the marinade, add chicken followed by the scallions, asparagus and carrots. Stir-fry for 3-4 minutes, until chicken is no longer pink.
Add marinade and cook until sauce is slightly thickened, about 1 minute. Serves 4.

I am an all things fashion obsessed Newlywed...between cooking for my little hubby man, working, cleaning, working out, being with friends & fam, etc. I love to shop & find fabulous clothes, shoes, and jewelry!! I really think I should have been a stylist in another life, lol. All I want to do is shop & style other people as well as do make-up! I love my job, and I wish I didn't need to sleep, so I can do all the things I want to do...because there is simply just not enough time in the day to do everything!!
